GID 506E - Food Stability

Course Objectives

To educate students to conceptualize and evaluate food stability and its relation to food quality by integrating gained knowledge of food components, deterioration mechanisms, processing-packaging-storage systems and by in-depth analysis of food deterioration mechanisms based on current literature.

Course Description

Food stability and quality; food deterioration reactions; factors effecting food deteriorations; evaluation of food stability based on current literature.
