Course Objectives		1. To introduce fundamental knowledge on genetics of lactic acid bacteria. 2. To demonstrate structural and functional characteristics of major genetic elements described in lactic acid bacteria. 3. To introduce usage of lactic acid bacteria in industrial processes.
Course Description		Fundamentals of genetics of lactic acid bacteria, structural and functional characteristics of four major genetic elements described in lactic acid bacteria, plasmid DNA, transposable elements, bacteriophage, chromosome, biotechnology of lactic acid bacteria, industrial applications of lactic acid bacteria.
Course Outcomes		1. Be able to describe the types of genetic elements found in lactic acid bacteria. 2. Be able to define the mechanisms used for gene transfer among lactic acid bacteria. 3. Be able to critically review research articles on lactic acid bacterial genetics. 4. Prepare a term project and present a class lecture on an assigned topic.
