Catering: Definition and classification, professional catering facilities, developments in catering industry, capacity, criteria, personal organisation, space organisation. Kitchens, classification, departments. Types of services: self service, waiter service, counter service, mass production and ready wrapped foods. Dining spaces, sitting organisations, requirements.
