Course Objectives
1. To introduce the global problem of food loss and food waste and their effects on sustainable food system.
2. To explain possible approaches to reduce loss and waste in the food industry and/or valorization of them.
Course Description
Sources of food loss and food waste, sustainable processing methods in fundamental agricultural and livestock production, valorization of food waste to produce food or non-food ingredients and product applications, national and global regulations.
