GID 417 - Cereal Technology

Course Objectives

Cereal processing industry has special place within the Turkish food industry and our department supplies technical people to the cereal processing industry. However, cereal technology subjects could be given in a limited time with limited content, besides other food processing subjects, within the “Food Technology” course of the program. Therefore, the objective of this course is to give the cereal technology information in details to the interested students.

Course Description

Cereal grains (General composition and structure, utilization), Bread wheat quality, Storage of cereals, Modern milling, Breadmaking technology, Durum wheat quality, Pasta production technology, Soft wheat products, Bulgur production technology
